Jackie Baillie's illicit Cookies

Don't even ask what makes them illicit haha

4 1/2 cups flower
1 tsp baking powder
1 tsp salt
2 tsp Vanilla essence
1 1/2 cup sugar
1 1/2 cup brown sugar
1 cup softened butter
4 eggs
1 packet chocolate chips

Just chuck all the ingredients in one bowl and stir well with a spoon. If you use a beater only do so on a really low speed. They don't bake well if beat on high speed...trust me, they come out pancake flat if beat too fast. I just mix everything with a spoon.

Preheat oven to 180 deg C. and cook for approx 8 - 10 mins. Makes about 2 dozen chocolate chip cookies that are so yummy that my ex Nick told me that i could market them and sell them for 3 bucks each.

They are GOOD...and make your home smell homey. Esp nice in winter. You would bake them now if you could smell my pad. They do not last if kids or teenagers are present. That's why i am baking my second batch in 2 days.

The most difficult part of making these cookies is NOT eating the dough.


This recipe was in my grandmother's cookbook that ended up at the tip. Lucky i remember this recipe because i had baked it so many times. Unfortunately i can't say the same for the delicious banana bread she used to make me.
